So being Sunday, I decided to take a walk to the local farmer’s market and see what goodies I could bring home. I was ready to eat some fresh salad from indulging a bit much from the weekend. I was not disappointed! I bought a mixed bag of salad greens, pink lady apples, and some amazing fresh ladysmith cheese. Omg, the cheese! I had initially gone there to get some fresh mozzarella but they were sold out for the day. The guy at the stand offered me a taste of this fresh ladysmith cheese. It was wonderful and so that’s what I bought. This cheese is light enough to sub in for the fresh mozzarella but has a bit more tang to it and just melts in the mouth. My mouth is now watering as I write this. My new favorite at the moment. I made a big salad for dinner for just my husband and I and we ate the whole thing plus more. It was just that good. Here is the random but awesome salad I came up with:
First get your greens ready. As I said, I got a mixed bunch, some spicy too! Fill it up in a big bowl and set aside.
Next, chop up your apple and peach in thin slices. I had 1 small peach left, but wanted more fruit so I added a small pink lady apple. If peaches are in season those are amazing but apples taste great too.
Add your fruit slices to your salad.
Next, heat up a small pan with 1tbs EVOO on medium heat and lightly toast 1/4 cup sunflower seeds. Walnuts would be amazing in this too. I just happened to have sunflower seeds so used that instead.
While the seeds are toasting, whip up your dressing. I just wanted a light simple dressing. In a separate bowl, mix 1/8 cup evoo, 1/2 tbs honey, 1/4 tsp parsley, 1/4 tsp oregano, and sea salt and pepper to taste. Add to the salad. The sunflower seeds should be ready by now. Add that to the salad.
Thinly slice up some of the ladysmith cheese. It will crumble and exact size does not matter. Whatever you like.
Toss all the salad ingredients together and top with cheese at the end. Easy and delicious!
This recipe makes a light meal for 2 or a side dish for 4. This is just what I prefer. If you like less seeds, add less seeds, want it sweeter, add more honey 🙂 etc….

a bunch of mixed salad greens
one apple or peach or both
3oz fresh ladysmith cheese or fresh mozzarella(any amount you prefer)
1/4 cup raw sunflower seeds
1/2 tbs local honey
1/8 cup evoo + 1 tbs(extra virgin olive oil)
1/4 tsp oregano
1/4 tsp parsley
sea salt and pepper to taste
fresh basil or mint (optional)
