So I tried a new snack a few weeks back. Chickpeas roasted in the oven with some spices. That’s it! So simple and delicious. It goes well with with rice and roasted veggies, spice up a salad, or as a snack alternative to popcorn! I love it and you will too, I promise!
First of all, here’s the ingredients I had to work with.
First off, preheat your oven to 400 F. Drain and rinse your can of chickpeas/garbanzo beans and place in a medium bowl. Next, add your evoo, chili powder, turmeric, garlic powder, and salt. Shake up the bowl to mix in all the ingredients evenly.
Now eveny spread your chickpea mix on a baking sheet and bake in the oven for about 20 minutes. If you like them to be crispy like popcorn, I’d go to 30 minutes. I like them crispy on the outside but a little soft still in the middle.
And here we go, a little spicy, crunchy snack!
I roasted some red bell peppers and leeks I believe, and ate it all together with some brown rice. Yumms! I ate it too fast to remember to take extra pics. Whoops 🙂
1 can of chickpeas
1 tbs evoo
2 tsp chili powder (more or less depending how spicy you like)
1/2 tsp garlic powder
1 tsp turmeric or cumin
sea salt to taste
